Addictive Sweet Potato Burritos

Ingredients:
– 3 teaspoons vegetable oil
– 1 onion, chopped
– 4 cloves garlic, minced
– 6 cups canned kidney beans, drained
– 2 cups water
– 3 tablespoons chili powder
– 2 teaspoons ground cumin
– 4 teaspoons prepared mustard
– 1 pinch cayenne pepper, or to taste
– 3 tablespoons soy sauce
– 4 cups cooked and mashed sweet potatoes
– 12 (10 inch) flour tortillas, warmed
– 8 ounces shredded Cheddar cheese

Directions:

– Preheat oven to 350 degrees.

– Make mashed sweet potatoes as you would fresh mashed potatoes.

– Heat oil in a skillet and sauté the onion and garlic. Stir in the beans and mash them all together. Add in water and heat. Remove from the stovetop and add in the chili powder, cumin, mustard, cayenne pepper and soy sauce.

– Place the bean mixture and mashed sweet potatoes evenly between the warm flour tortillas. Top with cheese. Fold up tortillas burrito style.

– Bake for 12 minutes in the oven.

Bistro Bagel Cheeseburger

Ingredients:
– 2 frozen BOCA meatless cheeseburgers
– 1/4 red onion, sliced
– 2 teaspoons olive oil, divided
– 1 medium portabella mushroom, sliced
– 1 teaspoon balsamic vinegar
– 2 plain bagels, split, toasted
– Arugula or leaf lettuce
– Freshly ground black pepper (optional)

Directions:

– Heat the cheeseburgers according to the package directions.

– Cook and stir onion in 1 tsp. of the oil in a nonstick skillet on medium-high heat. Place onion in separate bowl.

– Add remaining 1 tsp. oil and mushrooms to skillet; cook until lightly browned, turning occasionally. Add onion and vinegar; mix lightly.

– Place cheeseburgers on the bottom half of each bagel; top with arugula and mushroom mixture.
